Winter is a time for “cozy” food—dominated by root vegetables, heavy sauces, and techniques like long roasting or confit. Spring turns this order upside down. In gastronomy, we transition from satiety to freshness.
The magic of spring lies in the product defending itself. We no longer need heavy spices—a drizzle of good olive oil, sea salt flakes, and fresh herbs are enough to extract the essence of what has grown in the sun.
Heroes of the Spring Plate
What would a spring menu be without its icons? At InFormal Kitchen, ingredient selection is the process we focus on most. Here is what rules our kitchen this season:
- Green Energy – Asparagus: The absolute symbol of spring. They are crunchy, delicate, and incredibly elegant. However, they require precision—one second too long in the water or on the pan and they lose their charm. In our pre-release preview, we pair them with a velvety Hollandaise sauce to emphasize their nobility.
- Spring Greens and Herbs: Young radishes, chives, and aromatic basil, which becomes the base for our signature salsa. These give the dishes that characteristic, “green” flavor profile.
- Dairy Lightness: In spring, we reach for cheeses that complement rather than dominate the vegetables. Creamy Burrata is the perfect companion for juicy tomatoes, which are just starting to taste exactly as they should.

Our new spring menu, which we are working on intensively, is a tribute to this short but intense season. We believe that food should reflect what is happening outside the window. That’s why at Plac Małachowskiego 2, we focus on authenticity.
